Featured in our recent seasonals, we just couldn’t go past this one. It’s that good. Agronomist Nelsyn Hernandez called this farm Tres Milagros, meaning ‘three miracles’, because it was going to need something miraculous to save it. The estate had been abandoned for many years, and he set about to revive it in 2010. Through removing old unhealthy trees, strategic fertilisation and strong business management Nelsyn was able to rescue the dying estate. This is a Black Honey process, a complex and laborious treatment where the cherries are continuously turned to increase fermentation. Drying time can take 15 days, as the process is stretched out as long as possible. The result is delicious to say the least!
We love this coffee cos: the Black Honey method really shows up in the cup. The intensity of processing time enhances the flavours, with boozy red wine essence in the cup. We're here for it!
